Yutaka Yamada, the founder of Yamada Kyoto Corporation and also grandfather of the current CEO, moved to Katsura area in Kyoto prefecture in Japan in 1923 when the area where he had used to live suffered damages from the Great Kanto Earthquake that occurred in Japan. He started to work as a train driver for Hankyu Railway that just started to operate between Kyoto prefecture and Osaka prefecture. But his health declined due to excessive work.He started to look for a way to gain his health back. He then met Mr. Yukikazu Sakurazawa who started macrobiotics. He started macrobiotics diet following advises from Mr. Sakurazawa, and he gained his health back. When he thanked Mr. Sakurazawa for that, Mr. Sakurazawa said to him, “Why don’t you make foods that are good “for the society and for the people” yourself too?" So Yutaka started to make amazingly aromatic first squeezed sesame oil and established Yamada Kyoto Corporation
- At the beginning, Yutaka made not only sesame oil but also Japanese noodles such as buckwheat noodles and wheat noodles by grinding flour. Also, he dug a well to get safe and clean water for his rice cultivation. For the society and for the people, he used only safe and reliable ingredients to make the most reliable products. He never compromised. For that reason, we call Yutaka “HENKO” which means determined strong-willed person in Japanese.This word exactly explains the passion and determination that he had.

Food production: Roasted sesame paste:
We grind sesames slowly in such a way that those sesames do not get heated up so that they do not lose its amazing flavor. Making sesame paste this way, it can make only 1.2kg, which is about 2.6lb, of sesame paste per hour.

The first squeezed sesame oil:
Yamada Kyoto Corporation does not do common extraction method but old fashioned pressing method to make sesame oils. Not only that, we use only the first squeezed sesame oil in order to pursue the best flavor that we can provide. It also avoids risks of contaminations that the proceeding squeezes can cause. By doing these, we make smooth and aromatic sesame oils.

Hi! I’m Koichi Yamada from Yamada Kyoto Corporation. The founder of Yamada Kyoto Corporation is my grandfather, Yutaka Yamada. He need to take sick days out often because he got sick easily. The instructor who was giving my grandfather advises on his health was Mr. Yukikazu Sakurazawa, who started macrobiotics. My grandfather rather made sesame oil “for the society and for the people.”At the same time, my grandmother started to make what was called “sesame butter” at that time. We now call it “GOMA NERI NERI”, which is “sesame paste”.In response to the nuclear power plant explosions that occurred in Fukushima prefecture in Japan, instead of having fear of using locally grown sesame and other agricultural products in Japan that could have been contaminated by the radioactivity, we wanted to know how much they are actually contaminated. In order for us to know that, we ourselves wanted to measure radioactivity of all locally grown sesame and other agricultural products in Japan that Yamada Kyoto Corporation uses to make our products. For that purpose, we purchased a radiometer and now we’re measuring radioactivity in house.By the way, we write a letter to our customers every month. Our company is what it is today because of you.From now on, heading to the 100th anniversary, I want to put effort into running our business overseas. I’ll continue to work hard. Thank you.

The founder made sesame oil by squeezing sesame. His wife grinded sesame until it becomes thick paste and made sesame paste. She called it sesame butter. So Yamada Kyoto Corporation actually started with those two core products, the sesame oil and the sesame butter.

The stone mortar was huge. It had upper mortar and lower mortar, and the upper mortar rotated. There is a hole on the upper mortar. I put some sesames into a bowl, and I drop very small amount of sesame into the hole from the bowl little by little. Then as the upper mortar rotates, evenly well-grounded very fine sesame butter comes out from the space between the upper mortar and the lower mortar. It takes tremendous amount of time.

That is the reason why I name it “GOMA NERI NERI” instead of simple sesame cream. Growing sesame in Japan
Currently, 99.9% of sesames that’s used in Japan isimported from overseas. It’s difficult to find locallygrown sesame because it’s rare to grow sesame in Japan.We thought, “We can’t find locally grown sesame here in Japan.Then why don’t we grow it ourselves?”and started to growsesame in Japan. Harvest and reaping
The besting timing of reaping is when lower half of the stem and leaves on thelower half of the stem become yellow. Podsthat contain sesame become yellow startingfrom the ones on the bottom. First, we getrid of leaves from the stem and leave onlypods on it. Then we reap it from the verybottom of the stem and make bundles of about 10 stems each using lace. We do it with extra caution because if this step breaks the podssesames that we were carefully growing willdrop out from the pods and we’ll lose them.Then we put the bundles where nothing likerain hits them and dry them up. Sesamesstart to come out from the pods and drop with popping sound onto the sheets underneath.

Selecting to washing, drying, and color sorting and reaping
Using classic farm tool called winnowing-machine, we remove things like stones and leaves that are still with mixed up with sesames. Then we wash the sesames and dry them up. After that, using color sorting machine, we keep removing other tiny foreign objects several times. Then the sesames become edible food products.
Food Loss
Our challenges to reduce food loss.
We Yamada Kyoto Corporation have been striving to find ways to reduce food lossthat we’re facing such as remaining of sesames after it’s squeezed andresidue of the sesame chili oil.
Using the remaining of sesames
For instance, we’ve been using the remaining of sesames as fodders and fertilizers for years.We’ve been asking chicken farms to use it as their foddersand farms to use it as their fertilizers. At our Katsura main officein Japan, we’re also selling eggs of chickens that grew up by eating the remaining of sesames of Yamada Kyoto Corporation.
Katsura high school, one of our neighbors at our Katsura main office in Japan,also uses our remaining of sesames as their fertilizers when they grow crops.
We use only the first squeezed oil, that is about 27% of sesame oil in the sesame, for our sesame products because that’s the most delicious part of sesame and we want our customers to have delicious sesame products. After the first squeeze, more than 50% of sesame oil in the sesame still remains in the sesame. CEO of our company started to think that this remaining should not be wasted and we can reduce food loss if we can use it in any way.
About the same time, he started to go to graduate school of Doshisya University in Japan because he wanted to take a step back and learn business. There he learned material flow cost accounting, and he was sure that it can contribute to reduce food loss. He started researches on that and figured that making another products using the raw ingredients that were being wasted will indeed reduce food loss.
One of our products “sesame flour” is made this way. It’s made by the remaining of the squeezed sesames, and it can be used as just like flour to make food such as pastry and bread.
It doesn’t have a taste of roasted sesame, so you don’t need to worry about it when making pastry or bread. It’s fluffy powdered sesame, and it can be used just like almond flour. It’s pretty tasty not only when using to make pastry or bread but also when putting some on yogurt. Its fat is about 50% less than roasted sesame and its calorie is about 30% less than roasted sesame, but it’s still incredibly still rich in calcium, fiber, and iron. You can never imagine this product is made of remaining of sesames that used to be wasted.
We strive to use ingredients that we use for our product without causing food loss, and we strongly believe that it’s adding values to our products. Just like eggs that come from chickens that grow eating the remaining of our sesames, we are proud to take part of making unique products that contribute to reduce food loss.

Yutaka Yamada, the founder of Yamada Kyoto Corporation, used to get sick easily. Mr. Yukikazu Sakurazawa, who started macrobiotics, recommended him to eat brown rice. Following his instructions, he gained his health back. When he thanked Mr Sakurazawa, he recommended to him saying, “Yamada, why don’t youmake food that helps the society and the people?" Then he started making the first squeezed sesame oils.
The basis of our company is macrobiotics. None of our products has preservatives,artificial colors, artificial flavors, chemical seasoning or what so ever in it.During production of our products, no solvent or bleach or what so ever is used.

Nutrition facts of sesame and its benefits
About half of sesame is fat, mainly linoleic acid and oleic acid that are both unsaturated fatty acid. Unsaturated fatty acid boosts immune system and reduces cholesterol level. Linoleic acid produces cell membrane. As it’s one of the essential fatty acids that our human body cannot produces, we need to obtain it from our diet. Linoleic acid dissolves LDL cholesterol also known as bad cholesterol and displaces it.
