Yutaka Yamada, the founder of Yamada Kyoto Corporation and also grandfather of the current CEO, moved to Katsura area in Kyoto prefecture in Japan in 1923 when the area where he had used to live suffered damages from the Great Kanto Earthquake that occurred in Japan. He started to work as a train driver for Hankyu Railway that just started to operate between Kyoto prefecture and Osaka prefecture. But his health declined due to excessive work.He started to look for a way to gain his health back. He then met Mr. Yukikazu Sakurazawa who started macrobiotics. He started macrobiotics diet following advises from Mr. Sakurazawa, and he gained his health back. When he thanked Mr. Sakurazawa for that, Mr. Sakurazawa said to him, “Why don’t you make foods that are good “for the society and for the people” yourself too?" So Yutaka started to make amazingly aromatic first squeezed sesame oil and established Yamada Kyoto Corporation


  • At the beginning, Yutaka made not only sesame oil but also Japanese noodles such as buckwheat noodles and wheat noodles by grinding flour. Also, he dug a well to get safe and clean water for his rice cultivation. For the society and for the people, he used only safe and reliable ingredients to make the most reliable products. He never compromised. For that reason, we call Yutaka “HENKO” which means determined strong-willed person in Japanese.This word exactly explains the passion and determination that he had.

    Food production: Roasted sesame paste:

    We grind sesames slowly in such a way that those sesames do not get heated up so that they do not lose its amazing flavor. Making sesame paste this way, it can make only 1.2kg, which is about 2.6lb, of sesame paste per hour.

Hi! I’m Koichi Yamada from Yamada Kyoto Corporation. The founder of Yamada Kyoto Corporation is my grandfather, Yutaka Yamada. He need to take sick days out often because he got sick easily. The instructor who was giving my grandfather advises on his health was Mr. Yukikazu Sakurazawa, who started macrobiotics. My grandfather rather made sesame oil “for the society and for the people.”At the same time, my grandmother started to make what was called “sesame butter” at that time. We now call it “GOMA NERI NERI”, which is “sesame paste”.In response to the nuclear power plant explosions that occurred in Fukushima prefecture in Japan, instead of having fear of using locally grown sesame and other agricultural products in Japan that could have been contaminated by the radioactivity, we wanted to know how much they are actually contaminated. In order for us to know that, we ourselves wanted to measure radioactivity of all locally grown sesame and other agricultural products in Japan that Yamada Kyoto Corporation uses to make our products. For that purpose, we purchased a radiometer and now we’re measuring radioactivity in house.By the way, we write a letter to our customers every month. Our company is what it is today because of you.From now on, heading to the 100th anniversary, I want to put effort into running our business overseas. I’ll continue to work hard. Thank you.

    The founder made sesame oil by squeezing sesame. His wife grinded sesame until it becomes thick paste and made sesame paste. She called it sesame butter. So Yamada Kyoto Corporation actually started with those two core products, the sesame oil and the sesame butter.

    The stone mortar was huge. It had upper mortar and lower mortar, and the upper mortar rotated. There is a hole on the upper mortar. I put some sesames into a bowl, and I drop very small amount of sesame into the hole from the bowl little by little. Then as the upper mortar rotates, evenly well-grounded very fine sesame butter comes out from the space between the upper mortar and the lower mortar. It takes tremendous amount of time.

That is the reason why I name it “GOMA NERI NERI” instead of simple sesame cream. to be carefuland attentive during the entire process. Take a look.

  • Day 1- Part 1

    Roasting sesames
    in the kettle.

    The first step is to roast raw sesames in the iron kettle that’s surrounded by bricks. This is the most important step that affects quality of the sesame oil that will be produced. We depend on our sesame roasting professionals’ intuition on determining the best timing to complete the roasting. They decide when to complete the roasting depending on the temperature of that day so that they don’t stop too early nor too late. They roast raw sesames little by little slowly. While they roast they say, “Wow, this smells excellent!"

  • Day 1 - Part 2

    Squeezing the roasted sesames.

    After the sesames are roasted, they’re pressed to be squeezed. With the very first squeeze, only one third of the sesame is squeezed out as oil. We use only this first squeezed oil as our products for the best quality. We pour this first squeezed oil into the steel drum and let it cool down at room temperature. At the end of the entire process of making sesame oil, out of the raw sesames that were roasted, only 27% of them make it to our products.

  • Day 2

    Washing the first squeezed
    sesame oil in hot water and letting it
    precipitate naturally.

    The first squeezed sesame oil needs to be washed in hot water in order to remove impure substances from it. We put hot water in the steel drum where the first squeezed sesame oil was poured into. We mix the first squeezed sesame oil and hot water, and leave it for about 3 weeks. During those 3 weeks, water and impure substances that are heavier than the first squeezed sesame oil precipitate, and only the very pure flavor of sesame stays in the first squeezed sesame oil.

  • After 3 weeks to a month

    Refining the first
    squeezed sesame oil.

    After being precipitated for 3 weeks, moisture in the first squeezed sesame oil needs to be removed. First, we carefully take out only the precipitated sesame oil from the steel drum and pour it into the iron pot. To refine the precipitated sesame oil, we heat up the iron pot using firewood so that even a small amount of moisture that is in the precipitated sesame oil can be dried out. Adjusting temperature appropriately is extremely important during this step. The temperature that gets rid of moisture and the temperature that destroys sesamol, that is antioxidant of the sesame, are very close, and we don’t want to destroy sesamol. So we pay extra attention during adjusting the temperature.

  • The last step

    Filtering the first squeezed
    sesame oil using filter paper.

    Lastly, we put filter paper in the filter machine and pour the first squeezed sesame oil into it. We turn the faucet of the filtered machine on, and filtered sesame oil starts to drop into the bucket underneath. This is our happiest moment when see the very first drop of the shiny and clear golden sesame oil coming out from it. Once it fills the bucket, we move the filtered sesame oil to another steel drum.

  • A month after

    Spending about a month
    for the entire process,
    the raw sesames become
    golden sesame oil.

My childhood indoor play area was the sesame production factory of my grandfather and grandmother. The building was made of wood and rectangular. There were huge engines attached to the ceiling beams. The engines were rotating flat belts using pulleys, and the flat belts were being used to operate roasting pots and oil press machines. Those engines and machines were making various kinds of sound in the factory. The factory was full of smokes that were coming out from the sesames being roasted. In there, my grandfather and grandmother were taking out roasted sesames from the huge iron pot that was attached to the furnace made of brick. I still vividly remember all those things that I was seeing as a child like a clear picture in my head. I also still remember aroma of sesames and remaining of those sesames that were coming out from those oil press machines. The aroma is still in my nose. I never forget it.

I was a bit afraid of my grandfather because he spoke loudly as if he was shouting to win the fights in the factory, but he was very professional, extremely serious about his job, and kept everything so clean. He was always cleaning and polishing all the machines. All those machines were always shining. My grandmother was always smiling and extremely affectionate. I remember she made me brown rice balls for me while I was playing in their factory.

I always vividly remember all of these that were going on in the factory. It doesn’t physically exist anymore but only in my memory. My grandfather and grandmother are alive only in my heart. Now at Yamada Kyoto Corporation, we make their mindset alive in our works; my grandfather’s professionalism and my grandmother’s affection. Like they did, we genuinely continue to make the extremely flavorful products using the very best raw ingredients at the factory where we keep it clean at all times.

In general, sesame oil is made by extracting oils out of sesame that requires to use chemical solvent. We Yamada Kyoto Corporation makes sesame oil old way, that is, to press sesame to have sesame oil come out of it. With that, sesame oil is 100% natural and keeps taste of raw sesame in the oil. Also, we sell only the first squeezed oil. Our priority is to offer healthy and flavorful sesame oil to our customers.

    Yamada Seiyu’s
    pressing method

    Only about 30% of the sesame seed is squeezed out with the first squeeze. This 30% is the most tasteful part of the sesame. We Yamada Kyoto Corporation use only this part to make our sesame oil because only this portion is smooth and has full aroma of raw sesame seed.

    General pressing

    Using general pressing method, 35% of the sesame seed becomes sesame oil. The sesame seed is pressed three times because the sesame seed that is pressed only once still have oil in it.

    Extracting method
    using chemical solvent

    With this method, sesame oil in sesame seed and solvent such as hexane are mixed in the sesame. The mixture is then extracted the sesame. From the extracted mixture oil, only the solvent is dried out and the remaining sesame oil in it is used as edible sesame oil. With this method, it can extract almost all sesame oil from the sesame seed.

Growing sesame in Japan

Currently, 99.9% of sesames that’s used in Japan isimported from overseas. It’s difficult to find locallygrown sesame because it’s rare to grow sesame in Japan.We thought, “We can’t find locally grown sesame here in Japan.Then why don’t we grow it ourselves?”and started to growsesame in Japan.   • Planting


    This period is rainy season in Japan. Sesameneeds to keep growing throughout the rainyseason and extremely hot summer. It willtake about 3 months until it’s ready toreap. We plant sesame seeds hoping that they survive and grow to be excellent sesame.

  • Sprouting


    Sesame seeds starts to sprout sometimesearly, sometimes late, depending on theweather and conditions of the cultivatedfield. It requires repeated trial and errorno matter how much experiences we acquire. The very first thing to do is to learn aboutsesame. And as we learn new things aboutsesame every single year, we can expecthaving more full grown sesame.

    If the sesame seeds survive the rainy seasonand typhoons, seedling grows to be about 1.2 meters which is about 3’ 8’’. While it’sgrowing, farmers need to do various toughworks like weeding in the early morning,pest control, and all. Unlike vegetable, the lessthere is rain and the stronger the sunlight is, the bigger sesame grows.Unbearably hot weather and strong sunshine make our life and growing vegetable harder, but sesame grows and blooms biggeras much as it possibly can.

Harvest and reaping

The besting timing of reaping is when lower half of the stem and leaves on thelower half of the stem become yellow. Podsthat contain sesame become yellow startingfrom the ones on the bottom. First, we getrid of leaves from the stem and leave onlypods on it. Then we reap it from the verybottom of the stem and make bundles of about 10 stems each using lace. We do it with extra caution because if this step breaks the podssesames that we were carefully growing willdrop out from the pods and we’ll lose them.Then we put the bundles where nothing likerain hits them and dry them up. Sesamesstart to come out from the pods and drop with popping sound onto the sheets underneath.

Selecting to washing, drying, and color sorting and reaping

Using classic farm tool called winnowing-machine, we remove things like stones and leaves that are still with mixed up with sesames. Then we wash the sesames and dry them up. After that, using color sorting machine, we keep removing other tiny foreign objects several times. Then the sesames become edible food products.

Our challenges to reduce food loss.

We Yamada Kyoto Corporation have been striving to find ways to reduce food lossthat we’re facing such as remaining of sesames after it’s squeezed andresidue of the sesame chili oil.


Using the remaining of sesames

For instance, we’ve been using the remaining of sesames as fodders and fertilizers for years.We’ve been asking chicken farms to use it as their foddersand farms to use it as their fertilizers. At our Katsura main officein Japan, we’re also selling eggs of chickens that grew up by eating the remaining of sesames of Yamada Kyoto Corporation.


Katsura high school, one of our neighbors at our Katsura main office in Japan,also uses our remaining of sesames as their fertilizers when they grow crops.


We use only the first squeezed oil, that is about 27% of sesame oil in the sesame, for our sesame products because that’s the most delicious part of sesame and we want our customers to have delicious sesame products. After the first squeeze, more than 50% of sesame oil in the sesame still remains in the sesame. CEO of our company started to think that this remaining should not be wasted and we can reduce food loss if we can use it in any way.


About the same time, he started to go to graduate school of Doshisya University in Japan because he wanted to take a step back and learn business. There he learned material flow cost accounting, and he was sure that it can contribute to reduce food loss. He started researches on that and figured that making another products using the raw ingredients that were being wasted will indeed reduce food loss.

One of our products “sesame flour” is made this way. It’s made by the remaining of the squeezed sesames, and it can be used as just like flour to make food such as pastry and bread.


It doesn’t have a taste of roasted sesame, so you don’t need to worry about it when making pastry or bread. It’s fluffy powdered sesame, and it can be used just like almond flour. It’s pretty tasty not only when using to make pastry or bread but also when putting some on yogurt. Its fat is about 50% less than roasted sesame and its calorie is about 30% less than roasted sesame, but it’s still incredibly still rich in calcium, fiber, and iron. You can never imagine this product is made of remaining of sesames that used to be wasted.


We strive to use ingredients that we use for our product without causing food loss, and we strongly believe that it’s adding values to our products. Just like eggs that come from chickens that grow eating the remaining of our sesames, we are proud to take part of making unique products that contribute to reduce food loss.


Yutaka Yamada, the founder of Yamada Kyoto Corporation, used to get sick easily. Mr. Yukikazu Sakurazawa, who started macrobiotics, recommended him to eat brown rice. Following his instructions, he gained his health back. When he thanked Mr Sakurazawa, he recommended to him saying, “Yamada, why don’t youmake food that helps the society and the people?" Then he started making the first squeezed sesame oils.

The basis of our company is macrobiotics. None of our products has preservatives,artificial colors, artificial flavors, chemical seasoning or what so ever in it.During production of our products, no solvent or bleach or what so ever is used.
